I ordered from BoBo on main st once or twice and was disgusted when I saw they made the paper for being filthy with mouse droppings throughout.

There's so much chance involved with restaurant inspections. Being closed for something like a broken dishwasher or lack of hot water might have been a temporary problem or something they don't even use; yet, the problem will still necessitate a closure.

You know...it's actually funny you say that.

What many people (including inspectors) don't understand...is how the industry really works.

For those who actually have CAREERS in the food industry (that's different than a "job" so you understand)...it's a world of its own. The food industry demands high hours, low pay, and real dedication for anyone to be truly successful...but they take care of their own.

Inspectors, regulations, etc are nothing but nuisances which are typically ignored...or minimally followed just to avoid harassment.

considering most inspections are "Scheduled" I find it amazing that any places every have serious problems.

I don't think it is a small matter when a dishwasher is not functioning properly. Seems a few here think it is a minor infraction.

If you cannot sanitize the dishes between use, you should not be allowed to be open. Period.

Eating from dirty plates is not my bag.

Precisely!

When I was working in the industry, everyone knew when the inspectors were coming...they would schedule extra staff the night before to do a emergency scrub down.

Remember, regulations are just an obstacle to doing what you want to do to make money, brought to you by pinko bleeding heart commie/hippies. Nothing more.

Let the market decide how sanitary eatery's should be!

place where I worked we checked the temp of the dishwasher cycle every 2 hours. Never had a single problem and if we did, we would have voluntarily stopped serving until we got it working again.

some of the closures.. like lack of water.. are caused by the city working and they actually come in at the same time the water is being shut off and then come back as soon as its back on, you would think they would not have to do that, that restraunts would just close their doors voluntarily during that time period to avoid the name going up on the list of closures...

If the dishwasher isn't working properly and they don't do anything about it, imagine what else they are doing? Scrape off the mould and cook it...drop it on the floor and serve it...????

I suspect most restaurants don't test the dishwasher temperature.

I recall when the store owner came in one day to do a spot inspection....he started quizzing me and the rest of the staff on the minimum and maximum temperatures for various things....we had no idea. No one told us when we were working, and none of the management thought it was our duty to do so. Our job was to prepare food and run the kitchen. Their job was to manage the kitchen and make sure the equipment was working properly.

And the dishwasher never had it's temp taken.....everything came out steaming hot...if it was still dirty, it went back in again and again until it came out clean!

Not all restaurants wash using a dishwasher. Some small places wash by hand. In fact, most of our restaurants involve handwashing because, well, for a 30 seater that didn't come with a dishwasher, it just made more sense money-wise. There are sanitizing procedures for handwashing too. We received a warning once for a broken dishwasher in our kitchen. We had never used it before because, well, it was broken.

What are the other sanitizing procedures if you don't use a dishwashing machine. How do you get the tempreture high enough to kill bacteria? Or do you use chemicals?

Just wondering as I never knew it was acceptable to not use an automatic machine.

Someone who has actually worked as a dishwasher can confirm this, but I believe the procedure is that after the dishes are washed and rinsed and regular temperature, they are placed in a rack in a separate sink basin, and the very hot water is sprayed over the dishes for some amount of time....

I can't seem to find the Manitoba sticker online, but here's one for Alberta.

So, yeah, the choice is to either use really hot water or bleach water. If chemicals turn your stomach, you might want to move to the middle of nowhere. Wait, does that exist anymore? When I worked at A&W, I was surprised to find out the store policy was to rinse the lettuce in bleach water.

You'll find that human dishwashers tend to build up some resistance to hot water. My mom can pick up dishes that I would never be able to touch for more than a few milliseconds.
