I had a 'duh' moment when I read about the Scots and the connection with scones....sugar, powder and raisins....ta da...bannock becomes scones.

More likely the other way around....scones became bannock.....bannock was never indigenous to Canada.....but, it was readily adopted and adapted by the locals because of its ease to make over a fire, the ingredients being able to keep in camp/travel conditions and such. The best bannock I have ever had was over an open flame at twenty below with a hot cuppa tea in hand.....the lady making the bannock was in her seventies and still worked her trap line....cool.

One recipe I did run into in South Dakota, they call bannock down there "fry bread" and make these huge "Indian" tacos....delish....well, the "flour" comes from a local root veg, a sort of turnip, which get dried and ground up.....tasty stuff.

Oh wait, back on topic...
we used to make bread in our bread machine, but I find it comes out like a hard brick.... I much prefer walking down to Natural Bakery and picking up a loaf of light Canadian rye on a tuesday ;-)
