Never really noticed myself. Growing up on the farm EVERYONE purchased the bread by the case from the local bakery and it would sit in the freezer for a month or more. Right now we go and buy bread from Natural Bakery once a week and it sits in the freezer for at least a week. As long as you are talking real freezer and not that thing on top of the fridge most anything will keep quite well for a long time.

A chest freezer and good quality bread is key.

Fridge freezers and upright freezers are not sealed units and cause freezer burn far worse and sooner than chest freezers.

Fresh bread with a high moisture content is also important. This will keep the bread tasting better longer after being frozen. Double bagging your bread also helps.

That explains it then. I only use my fridge freezer. Up 'till now I'd no idea it was inferior to a chest freezer.

How does one determine the moisture content in a loaf of bread?

by eating it or usually even just touching it. Most breads are fairly consistent.

I've tried that. It makes the bread smaller. The upside is I can fit more loaves in the fridge.

umm.. dont ever store bread in a fridge.. (or garlic) dries it out like a motherfricker.

How well it toasts is my trick.

If I can make toast and can butter it (with the butter melting) and still be warm when I eat it. I consider it good quality.

Nothing is worse than a bread that once toasted is dry, cold and hard.
